Pork Satay ( Moo Satae )

500 grams pork loin

1/2 cup coconut cream

1 table spoon finely chopped galangal

1 table spoon finely chopped lemon grass

2 table spoons ground roasted coriander seed

1/2 table spoon ground roasted cumin seed

1/4 table spoon ground pepper

1 table spoon salt

2 table spoons sugar

bamboo skewers

fresh cabbage for garnish

 

Satay Sauce 

1/4 cup red curry paste

2 cups coconut milk

1/2 cup coarsely ground roast peanut

1/4 cup sugar

1/2 table spoond salt

1/4 tamarind juice

 

Cucumber Relish

 1 red spur chili, finely sliced

4 cucumbers

2 shallots, finely sliced

1 table spoon chopped coriander

1/4 table spoon salt

2 table spoon sugar

1 1/3 cups vinegar

 

  Mix the roasted peanut with the curry paste, Heat 1 cup of coconut milk over medium heat until oil surfaces.
